My favorite quick & easy kid tested and approved recipe

As a busy working mom, I often feel like the ring master of a three ring circus. It is a constant balancing act. Getting home after a long day at work with hungry kids looking for food, the last thing I want to do is stare in the refrigerator and search cabinets for about 15 minutes just trying to decide what to cook for dinner or give up and just order pizza.

I can always rely on my favorite meal as a quick, hearty meal. It is very budget friendly, easy to prepare, freezer and microwave ready, tasty and also good for you. It can also be easily adjusted to match your mood.  I love spice variety mixes like Mexican (add salsa for a bit of a kick), Italian or Asian. The other night my kids asked for this meal and it brought a smile on my face.




Ingredients:
Can of chopped tomatoes
Can of beans (use 2 cans of one or 2 different types of beans for variety)
Frozen vegetables
Seasonings (pick a different spice to suit your tastebuds)
Leafy greens

Optional:
Brown rice Success brand boil in the bag (easy to make while preparing other items or cook rice in a rice cooker)
Tortilla chips or wrap

Throw the canned tomatoes, canned beans, frozen vegetables, and seasonings in a big pot and let cook. During the last 5 minutes, i sometimes throw in a small handful of spinach, kale or both.
